Rice Pilaf

2 Tbsp margarine; 1 cup uncooked rice; 1/3 cup celery, diced; 1/3 cup onion, diced; 1/3 cup carrots, diced; 3 cups chicken broth; Salt and pepper to taste; Parsley (few sprinkles); Silvered almonds (opt.)

Melt margarine in pan, then add rice and vegetables. Cook, stirring until slightly brown. Add chicken broth and simmer covered until moisture is absorbed and rice is tender. Add sprinkle of parsley and almond if desired. Toss slightly and serve.
